From the bean to the tablet, passing through the mountain

This is how AltaPietra chocolate is made.

Roasting

We release the aromas of the cocoa beans and eliminate the bacterial load.

Decortication

We remove the fibrous and acidic peel, obtaining a fine and clean grain.

Stone grinding

We obtain a high-quality cocoa mass, slowly and respectfully, to preserve its organoleptic qualities.

Conching

We mix and oxygenate the cocoa mass to obtain a smooth and homogeneous consistency.

Refining at high altitude

We transfer the cocoa blocks to the high mountains to enhance their aromas. Temperature, altitude, and time work together to enhance the chocolate's aromatic profile.

Tempering and Pouring

We transform the blocks returned from the mountain into delicious chocolate bars.
